Simple Tomato Salad

With the warmer weather and tomato season in full swing, we've shared one of our favourite tomato salad recipes. It's super simple and focuses on the flavour of the different tomato varieties that we get during this time of year.


It goes with anything and everything but particularly well with grilled meats and fish, burrata (of course!), roasted aubergines and potatoes or a red rice salad.



Serves 6-8


INGREDIENTS:

  • 300 grams of cherry tomatoes - mixed colours

  • 300 grams of medium-large tomatoes - mixed colours

  • Rocket leaves

  • Handful of caper berries

  • 1-2 tsps of roasted and slightly crushed fennel seeds

  • Extra virgin olive oil

  • Salt

  • Pepper

  • Optional: sliced red onions / balsamic vinegar / basil

METHOD:

  1. Chop most of the cherry tomatoes in half, leaving a handful whole to create different textures

  2. Slice the medium-large tomatoes into half-1cm slices

  3. Take a large platter and scatter the rocket leaves all over

  4. Place the sliced tomatoes and cherry tomatoes on top, creating layers and making sure you can see the different varieties

  5. Sprinkle fennel seeds on top

  6. Garnish with caper berries

  7. Drizzle over a good glug of EVOO

  8. Season with salt and pepper


You can also add feta cheese on top, some crushed pistachios, olives and chickpeas.
